Oh my goodness. I'm going to have to try this for my husbands birthday. We always buy a Sam's Club carrot cake but this will be so much better.

AMAZING!!! I just baked this cake for my husband for a Father's Day treat. I followed your recipe and that is going into my recipe box. I'm not a great baker, in fact, I did make a mistake by using 2- 8 in cake pans. The batter spilled over in the oven (mental note: use 3 pans and fill each pan half way). So I had to bake my cakes longer in the oven. Anyway, once they cooled and I frosted them, my hubby loved it! I did add a few ingredients such as crushed pineapple, raisins, and coconut shreds.I also used walnuts instead of pecans. Thank you guys so much!
