I love this recipe, its so flavourful and moist. I made it into cupcakes this time, got about 16 cupcakes( Australian large patty pan cupcake holders). Reduced sugar to 200gms , reduced oil to 200 ml , reduced baking soda to 1/2 tsp, baking powder to 1 tsp and added 1/2 cup crushed pineapple. Also baked at 160 C for 25 mins in fan forced oven. The cup cakes , even straight out of the oven have so much of flavour. The pineapple doesn’t dominate, and only comes through subtly . Thanks Stephanie for your generosity in sharing all these amazing recipes over the years, you’re an amazing baker.

Does anyone know, if unfrosted , can these cupcakes be left covered on the counter ( to be served following day) , or do they need to be refrigerated ? Thanks for any help.

Hi Stephanie love your recipes the last carrot cake I made it turned out beautiful and tasted great, but when I went as u said and added the baking soda an used my bundt pan when I did cut into it had made some of my carrots turn green, will not add baking soda no more
but will try this cake just without the soda, love your channel.
