It’s crazy moist and fluffy from all that buttermilk, carrot pulp and brown sugar! The oil gives it such an amazing fluffiness! I hope you all enjoy this carrot cake as much as we do!

I learned how to make this cake 3 weeks ago and my family has forced me to make it 4 times. DANGEROUS LOL. Crazy moist and fluffy. The only thing I changed was using milk and vinegar instead of buttermilk because I didn't have any on hand. But the cake still came out amazing. Everytime I make this my family goes ham and it's gone within 2 hours. Doesn't even need frosting. It's amazing all in itself

INGREDIENTS

1 cup vegetable oil

1 cup granulated sugar

½ cup brown sugar

3 eggs, room temperature

2 teaspoons vanilla extract

2½ cups carrots grated (see note)

2 cups all-purpose flour

2 teaspoon baking soda

½ teaspoon salt

2 teaspoons cinnamon

¼ teaspoon nutmeg

⅛ teaspoon ground clove

1 cup buttermilk

GET CREAM CHEESE FROSTING RECIPE

Preheat the oven to 350
Bake for 15-18 minutes
