As for apple pie for breakfast, I once had an aunt who was a fabulous cook, and got great pleasure in overfeeding her relatives. She baked an apple pie special for the after dinner dessert, but the meal was so huge there was no place for it. You guessed it, it was sitting there for breakfast with no-one allowed out of the house until that pie was consumed.

Had to laugh about the 1% low fat milk in a cup with all that oil… lol. The pie looks great. I'd probably add a little cinnamon/nutmeg, but nice that you used the tapioca.. That's what my mom taught us to use too. It works great.

You disappoint me that you add sugar to your apples. Surely the beauty of a tart apple is the tartness. I use English Bramley apples which have an even sharper taste. They are the best of all for cooking. The tapioca is a very good idea for soaking up the juice. Semolina would probably work too.
It would be healthier to use much less sugar on top of the pie too. You've already got it in the pastry and in the apples.
