Great video. Technical question. I am trying to achieve a low sugar/high fat ice cream, but it gets so hard, so I tried salep starch as stabilization, and it helped a tiny bit, but now I feel like the ice cream acts like it just moved into my mouth and will not leave. Any tips on how to do a low sugar/high fat ice cream?
