A crushed cookie base is smothered with a tangy lemon filling, then covered with a mound of glossy white meringue. INGREDIENTS IN THIS DISH:

Base:

250g Packet of Plain Sweet Cookies
125g Butter (melted)

Filling:

1 Cup of Castor Sugar (Super Fine White Sugar)
1/2 Cup of Corn Flour (Corn Starch)
1/2 Cup of Lemon Juice (125ml)
1 Cup of Water
50g Butter (chopped)
3 Egg Yolks

Topping:

3 Egg Whites
1/2 Cup of Castor Sugar

Preparation Time: 15 minutes + Chilling Time
Cooking Time: About 10 minutes

SERVES 10

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

You should always cook the egg whites over a double broiler until HOT. Stirring constantly until the sugar melts.
Then beat them with a mixer. Eggs need to be cooked so we won't get the flu.
They cook up perfectly just the same.

Just a personal preference but I always find that the meringue sticks to the filling better when you put the meringue on while the filling is still hot

I noticed you didn't use cream of tartar in your meringue and the other recipes I seen use it. Is there a reason why it's used? Does it do anything to the meringue?

Hi, as a kid in the Uk, I remember the lemon mix being much tarter than the modern creamy lemon mix. ย If I reduced the amount of butter in the recipe, would this work and also make the lemon mix more transluscent?

Hi Sweetie Pie ๐Ÿ˜€ Love all your Recipes LoL hmmmm got an idea, I'm going to try making the Lemon Filling and instead of using a "crust/bottom" was thinking that I would bake up a sheet of puff pastry & once cooled plopping on the lemon filling & adding the Meringue & then baking.
