I winged this recipe and made the marinade by putting the ingridients in 1:1 ratios, and it was surprisingly good! It wasn't too salty and the meat was very tender. Putting a lot of black pepper really enhanced the taste.

Do you know the purpose of using the baking soda at the beginning? Is it a must or can I skip that part. I hardly ever use it and it'd be a waste of just use it once or twice and throw it away after it expires. I know the ginger and rice wine can take away to raw meat taste. So skipping the baking soda part should be okay right?
