Everyone needs a good Carrot Cake recipe under their belt and THIS is all you'll ever need to make that happen! I've been making this recipe for donkey's years and I hope it will be your go-to carrot cake recipe too!
Recipe -
For the Carrot cake...
420g plain flour
480g caster sugar
250g finely ground walnuts
2.5 tsp cinnamon
3/4 tsp salt
1.5 tsp baking powder
1.5 tsp bicarbonate of soda
6 eggs
450ml vegetable oil
375g finely grated carrots
For the Cream Cheese Icing -
170g butter
270g cream cheese
930g icing sugar
+chopped walnuts to decorate

What recipe ratio should i use for four 6inch pans..???
Jemma, In your carrot cake recipe you do not mention how much walnuts..How much?
I made this with two cake pan with 180°c at 60 minutes baking time and it turned out perfectly moist and browned with sweetness just nice for both the young at heart and little ones….Thank you so much Jemma😘

sorry but too much sugar!!! I counted about 1 and a half kilos of sugar!

What a suck! It's too much oil and sugar, you should add moreless oil I mean is no necessary and sugar too.

I made this cake and frosting and i just gotta say.. Never make a cake with oil! Real butter or go home. Also the icing was just bland and sweet

I’ve tried this and it’s just inedible because of the 9000000kg of sugar. It’s way too sweet. Baklava is nowhere near as sweet as this cake.
This is too sweet. Cut back on the sugar for the cream cheese and it’ll be perfect
What do you do with the pieces cake you cut off?
How come my icing never turns out like on those videos? I follow the recipe, this time used whisk to do it by hand not to overbeat it , yet still it turn out more runny consistency than spreadable like your one! What do I do wrong? I’d never be able to decorate a cake like this one with my icing!
What type of cream cheese do you use? Perhaps Philadelphia is not good… 🤔

I made this cake today and it is so delicious but the cream chess is too sweet you might reduce the amount of sugar and test it before adding more
