1 medium onion, finely diced
2 carrots, finely diced
1 red bell pepper, finely diced
1 yellow bell pepper, finely diced
2 cloves garlic, minced
½ jalapeno pepper, seeded and minced
1 bag brown lentils
1 can kidney beans, rinsed and drained
4 cups vegetable broth
1 28oz can diced tomatoes
1 28oz can crushed tomatoes
2 tbsp chili powder
1 tbsp garlic powder
1 tbsp ground cumin
salt and pepper
fresh cilantro, finely chopped
Combine all of the ingredients in your slow cooker. Turn it on High and allow it to cook for 3-4 hours or until lentils are completely tender.
Serve immediately or store in the refrigerator for up to 5 days. Freeze for up to 4 months

Stuffed Zucchini http://bit.ly/1n3qPU4
4 zucchini
1 tbsp oil
1 yellow onion, finely diced
2 cloves garlic, minced
1lb cremini mushrooms, finely diced
½ cup breadcrumbs
ž cup parmesan cheese, freshly grated
1 egg
salt and pepper
fresh parsley, finely chopped
1 cup tomato sauce
Cut zucchini in half and remove the seeds with a spoon. Set seeds aside. Arrange zucchini halves in a large baking dish and season with salt and pepper.
In a large frying pan heat oil over medium-high heat. Add onion and sautĂŠ for 3-4 min or until it begins to soften. Add garlic and sautĂŠ for an additional 30 seconds.
Add mushrooms and cook for 5-7 min.
Transfer mushroom mixture to a bowl and allow it to cool slightly. Once it’s cool, add breadcrumbs, ½ cup parmesan cheese, egg, salt, pepper and parsley. Mix well.
Fill each zucchini half with the mushroom mixture. Top each with 2 tbsp of tomato sauce. Bake at 400°F for 15-20 min. Top with the remaining parmesan cheese and broil for 2-3 minutes.
Serve immediately or store in the refrigerator for 4 days

1 yellow onion, finely diced
1 clove garlic, minced
1 cup quinoa
2 cups vegetable broth
2 cups baby spinach, finely chopped
1 cup cherry tomatoes, halved
salt and pepper
In a large saucepan heat oil over medium-high heat. Add onion and sautĂŠ for 3-4 min. Add garlic and sautĂŠ for an additional 30 seconds. Add quinoa and broth. Bring the mixture to a boil. turn heat to low, cover and simmer for 15 min. add tomatoes, spinach, salt and pepper. Turn off the heat, cover again and allow quinoa to sit for an additional 5 minutes or until the spinach is wilted. Serve immediately or store in the refrigerator for 4-5 days

2 sweet potatoes, peeled and diced
2 red bell peppers, diced
1 red onion, diced
1 tbsp oil
1 tsp garlic powder
salt and pepper
Preheat oven to 400°F. In a large bowl toss sweet potatoes, peppers and onion with oil, garlic powder, salt and pepper. Transfer them to a baking sheet. Bake for 25-30 min or until sweet potatoes are completely tender. Serve immediately or store in the refrigerator for 4-5 days

½ cup red onion, finely diced
1 red bell pepper, finely diced
1 green bell pepper, finely diced
1 can chickpeas, rinsed and drained
1 can kidney beans, rinsed and drained
1 can green beans (or steam your own)
2 tbsp olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
salt and pepper
In a large bowl combine red onion, red bell pepper, green bell pepper, chickpeas, kidney beans and green beans. In a small bowl whisk olive oil, red wine vinegar, Dijon mustard, salt and pepper. Toss well.
Store in the refrigerator for 4-5 days. Shake well before eating

Blueberry Apple Yogurt Parfaits http://bit.ly/1Ol2sdb
For the Blueberry Vanilla Applesauce:
8-10 apples, cored and quartered
2 cups blueberries
½ cup apple juice or cider
1 tsp vanilla extract

For the Yogurt Parfaits:
2½ cups vanilla yogurt
1Âź cup granola
In a Dutch oven or large soup pot combine all of the ingredients. Make sure the vanilla bean is submerged. Bring mixture to a boil and then reduce heat to low, cover and simmer for 60 to 75 min. Stir mixture often. Remove pot from heat, remove vanilla bean and puree using an immersion blender.
Allow applesauce to cool completely before packaging. It can be stored for up to a week in the refrigerator or 6 months in the freezer.
Layer vanilla yogurt, applesauce and granola in jars. Store for up to 5 days in the refrigerator

2 cloves garlic, minced
1-2 tbsp olive oil
1 tbsp lemon juice

Combine all of the herbs and the olive oil in the bowl of a food processor. Blend until it begins to become smooth. Add lemon juice, feta cheese and Greek yogurt. Blend until smooth. Season with salt and pepper. Store in the fridge for 4-5 days

– Regurgitation is a pretty old trick, with origins dating back to the 1600s and beyond. It was initially called water spouting, since it involved drinking as much water as possible and then “spouting” it out of your mouth in controlled streams.
– The great Hadji Ali took this trick a step further by drinking kerosene after the water so that it would sit at the top of his stomach.

But when night falls, you look out your window, and…no stars! They’re obviously still there…so what’s going on here?? Well, there are a few reasons!

Do you know, for example, what light pollution is? When you’re flying over a huge city like New York, London, or Tokyo, the stars have to compete with all of those artificial lights from the cities. It might seem crazy to think that man-made lights will block out the light of millions of stars, but the stars are much further away than those glowing city lights below!

SUMMARY:
– No matter how dim the lights might get as they’re turned down around bedtime, there are enough of them to make it difficult to see the stars – which, keep in mind, are still quite a few miles away!
– A lot of light pollution, like the kind you’ll get flying over a big city, can cause skyglow. Even if you aren’t flying directly over it, you can still see a big city to the left or right of you from a plane.
– The moon still blocks the light of some stars when you’re stargazing from Earth.
– It might feel like you’re much closer to the stars while up in your airplane, but in terms of miles and light-years, you aren’t really that much closer.
– Atmospheric turbulence is irregular air currents that are mixed around by the wind.
– Turbulence may bring in clouds, even on a clear night, which will block your view of the stars.
– The retina is the part of your eye that processes light. If you have any pre-existing conditions, such as diabetes, or have had any head trauma, your retinas may not work properly, and you may not be able to see the stars.
– It takes us 10-20 minutes for our eyes to acclimate to the dark. So if you’re trying to see the stars from your plane and can’t, don’t give up too quickly!
– The windows of an airplane are oddly shaped and on the small side, only reaching from about shoulder to elbow; not ideal for stargazing.
– Assuming that it’s a clear night, one option is to cover your head and sides of your face with your travel blanket. The goal here is to block out all the unnatural light from inside the cabin.
– You could also try asking the flight attendants if they could shut off the cabin lights for a minute or two.
– If you’re flying over an area with no skyglow or light pollution, and the lights are off in the cabin, you should be able to see some stars once your eyes adjust.
– If you’re doing some nighttime flying over Idaho, Utah, Colorado, or British Columbia, you just might be in for the sight of a lifetime! These parts of the U.S. are homes to many protected national parks and nature reserves, so there’s no danger of light pollution or skyglow.

– If you decide to land on Jupiter, the first problem you’d encounter is this gigantic planet’s composition, which is mostly made up of helium and hydrogen. The atmosphere also has small fractions of ammonia, methane, sulfur, and water vapor.
– First and foremost, without any oxygen in the atmosphere, you’ll need to bring along huge supplies of this gas just to be able to breathe. Secondly, as you’ll be nearing the planet, you’ll take the full brunt of the incredible temperatures at the top of Jupiter’s atmosphere.
– Jupiter rotates much faster than any other planet in our solar system, which means one whole day on this planet is only about 9½ Earth hours.
– As soon as you descend 430 miles lower, the air pressure will get 1,150 times stronger than it is on Earth. There’s only been one man-made craft that could withstand such pressure, and it was the Trieste bathyscaphe.
– Now you’ll have already passed 2,500 miles, and the temperature will have reached 6,100°F. If the temperature gets just a tiny bit higher, it’d be enough to melt even tungsten, which has the highest melting point of any metal known to humankind, and that’s a whopping 6,192°F.
– If you move even deeper, you’ll experience the metallic hydrogen’s buoyancy force. It’ll stubbornly counteract the downward pull of the planet’s gravity.
– But what if you managed to defy the laws of physics and have a peep at the core of the giant planet? Then, according to what scientists presume, you’d have to withstand temperatures the human brain can’t even fathom: 43,000°F!

– If you or someone you’re with suddenly feels unwell in a public place, don’t ask everyone around you for help all at once. Instead, find the nearest individual, and ask them specifically.
– Even if you feel totally safe at a stadium or a cinema, and believe nothing can go wrong at a huge mall, it is better to be safe than sure. So, the second you get in, take a look around and mark your way to safety in your mind.
– You should always have something heavy inside the car that can be used to break the window if necessary. A steering wheel lock, fire extinguisher, or any other heavy object would be suitable for this. Some people believe the best thing you can use is the headrests.
– Over 1 million injuries happen because of stairway falls every year, to be precise. So, never put your hands in your pockets when climbing or descending a staircase so that you can easily catch the handrail if you slip.
– It’s much more effective to hold your keys as you would a knife or clutch them in your fist. This way, you won’t have to look for your keys, and it will be easier to defend yourself. See, not everyone knows how to work a knuckle-duster, but you most definitely know how to hold and use a knife.

Hidden Storage: Under-the-Stairs Bookcase

Until now, this triangular area under the stairs has just been wasted space. But today I am going to turn this spot under the stairs into a beautiful and useful recessed bookshelf.

The first step for doing any project where you are recessing something into the wall is to find the studs. Trace out the stud pattern, and then you can use that framework to design the bookshelf.

Basically what I am going to do is to create boxes that fit between the studs, and attach those to the studs with screws. Then I can put trim around the outside edge to hide those seams.

The first step is to cut out the drywall for our boxes, and I will do that with a drywall saw like this one.

So now we have our openings and can take measurements to draw up the plans for my boxes. I am making 3 boxes with adjustable shelving, which will get smaller as they go, to match my descending staircase.

You can build your boxes out of plywood, and attach them together with screws or nails.

Make sure to test fit as you go. You want a decently snug fit, but not too tight. You can always add some shims to make it fit better when you screw things together later.

Now that the boxes are built, I can drill holes for the adjustable shelving. I have these shelf pins from Lowe’s, and that shows me what size drill bit I need to use. Use a piece of pegboard as a guide to draw the holes for your shelf pins, and then drill only a quarter-inch into your side pieces.

These boxes need some shelves. Measure your boxes and cut your shelves to the right size, and test fit with the shelf pins to make sure they fit correctly.

Now is a good time to paint the boxes and shelves. I’m going to paint the sides of my bookshelf white, and the back panel to match the rest of the wall.

The way you paint and decorate this bookshelf will really change the look of the room, so explore some paint and wallpaper options that fit your space.

Put the boxes into place, make sure they are level, and attach them with screws into the studs.

Finish it up by adding trim around the outside edges, and you are done!

Believe it or not, but you have to thank mosquitoes for the invention of air conditioning, or, at least, its forefather! No one loves them in the 21st century, but back in the 19th, those guys were a real nightmare. Things were especially bad in swampy areas of Florida.

A local physician and inventor Dr. John Gorrie was trying to find a way to drain the swamps, and while he was at it, he got this revolutionary idea in 1841. He realized the problem was literally in the air. So cooling the air could fix it!

– Dr. John Gorrie arranged shipping of buckets of ice from frozen lakes and streams in the North of the country into hospital rooms in Florida.
– By 1851, he designed an air compressor to make ice out of water. The mechanism was powered by a horse. This is how the concept of air conditioning was born!
– A few decades later, engineer Willis Carrier designed the first electrical air conditioning unit with cooling coils and air filters.
– Air conditioning made its first mass public appearance at the St. Louis World’s Fair in 1904. The 1,000 people in the auditorium definitely loved the idea of comfort cooling.
– It was good enough for public buildings, but still too large and expensive for homes. It took a couple more decades for engineers to design something perfect for private houses.
– Today’s air conditioners work on the principles of Carrier’s invention but are, of course, more energy efficient, much quieter, have way better diagnostics and controls, electronic sensors and are made of better materials.
– The outdoor unit consists of a compressor, condenser coil and a fan. Another vital player in this process is the refrigerant.
– The heat from the air inside your home mixes with the refrigerant and moves through the compressor and to the outdoor coil.
– It’s important to squeeze the gas tightly because the higher the pressure, the higher the temperature.
– There can be an indoor unit in every room of your house, or the ones you need to keep cool, or one unit in the closet or the basement, or somewhere inside your house.
– The hot air from the room is sucked in through the return vents. Then, the air meets the refrigerant. At this stage, the hot air loses its heat and moisture.
– The expansion valve helps it blow off some steam and lose some extra pressure.
– Then the refrigerant goes from liquid to gas and is ready to move over the ice cold evaporator coils.
– Each and every detail in the air conditioner is super important, and even if one of them goes off, the whole process will stop.
