I always felt that everyone definitely, should experience various life’s spicy challenges. I believe that for a tasty, meaningful and a complete life, challenges are indeed a blessing in disguise! I truly wish everyone get the courage to turn these present challenging crisis in to a greater blessing than a disappointment in life. The amazing life that I spent with my Grandmother and Brother in my village became such a challenge in my life too. Today both me and my brother are been gifted with strong and independent lives, thanks to the love and care that our grandmother gave as best as she could for both of us. The parental love and care that we lost from our parents was replaced by Grandmother’s guidance and protection through out our lives. I feel those challenges became blessings in disguise and trained us for house hold chores, gardening and cooking and cleaning and gradually trained both of us to be who we are today.
Our brother is very talented for cooking various types of meat and fish dishes. Among them are few of his own creations where only he can cook these delicious curries. Occasionally he make this very unique , spicy and sour fish curry which I feel that the dish is a signature curry of his own! Since we bought a mullet fish that day, I asked him to make his secret fish curry. Since I know that if I stay close to him in the kitchen, that I will get his sarcasm for trying to find out his secret method of making the curry, so I slowly went out to the garden to pick some Mussaenda leaves.
Mussaenda leaves(Mussanda Fondosa) always fascinates me. A white leaf sprung out of the green tree. It’s neither a flower nor a leaf of the mussaenda tree. Among some folks this is known as “Buthsarana leaves”. Actually the leaf is a delicious delicacy when batter fried, We call it Mussanda Papadam, because when they being fried, they become puffed and crispy like Papadams(papads). By the time I returned home, brother had already cooked the curry. The lunch menu became a hit with his secret fish curry, fried Mussaenda Papadams and rest of the accompaniments.
Well my friends, at lunch, my brother promised me to reveal the secret the secrets of his signature fish curry, in return for my “Blue sago”, one of his favourite. Since it was not a very complicated dish, I made him the blue sago. It was an easy step where the blue butterfly pea flowers has to be soaked in hot water, and cook the sago in that blue tinted water. To give a more tantalising rich flavour, a slice of fresh ginger, a piece of cinnamon can be added. I cut the dragon fruits that I had at home into cubes and garnished the drink with them, enhancing the shape and the taste into the drink. First I spooned some cooked blue sago into the bottom of the drink glass and squeezed a half a lime. Then the blue tinted butterfly pea flower extract becomes red, nature’s magic! and finally I named it “Blue-purple sago” since it has two colours now!
I couldn’t help smiling when my brother kept on explaining about the recipe of his signature fish curry. Then it occurred to me that it’s best to let the secret of his fish curry remain a secret and to get my brother to cook it for me with his own special touch.

FRIED CAULIFLOWER
▪1 lrg head cauliflower (2lb/1kg)
▪2000g/mL water
▪250g or 1c white vinegar
▪50g or 2 3/4Tbsp salt
▪20g 1 2/3Tbsp sugar
▪500g or 2c buttermilk
▪40g or 3Tbsphot sauce
▪350g or 1 3/4c ap flour
▪350g or 2 1/4c rice flour
▪7g or 1 1/4tsp salt
▪7g or 1.5tsp baking powder
▪5-6g or 2tsp black pepper
▪5-6g or 2.5tsp paprika
▪2-3qt or 2ltr high smokepoint oil (canola, grapeseed, etc) – amount depends on pot size
Remove most of the cauliflower core. Cut into about 2”/5cm chunks, keeping stem and floret on each piece. Place cut pieces into a large container.
Heat a saucepan on the stove over high and add water, vinegar, salt, sugar, and stir to dissolve. When liquid is at a boil, pour over the cut cauliflower. Use a lid or another container to be sure cauliflower is fully submerged in the liquid. Allow to marinate for 1 hour,
Drain off liquid and transfer to cauli to a tray. Dry off slightly.
Into a medium/large bowl, add buttermilk and hot sauce. Stir to combine. In a second large bowl, add flours, salt, baking powder, black pepper, and paprika. Whisk to combine. Add in about half of the cauli to the dry bowl and toss to coat. Transfer to a tray and repeat flour dredge with second half of cauli.
Add half of the dusted cauliflower into the buttermilk mixture. Toss to coat. Transfer back into the dry dredge bowl. Toss to coat. Transfer to a tray and repeat with second half of cauliflower.
Heat oil in a large heavy bottomed container. I’m using 2-3 qt in my 6.75qt dutch oven until oil reaches about 350F/175C.
Gently lower in about half of the breaded cauliflower into the oil using a spider or long spoon. Allow to fry for about 1 minute then gently stir to be sure nothing is stuck together. Fry for about 3 more minutes or until breading is golden and firm. Repeat with second half of cauliflower. Transfer to a wire rack to drain.
In batches, transfer to a bowl and drizzle over buffalo sauce. Toss to coat. Serve.

BUFFALO SAUCE
▪300g or 1 1/8c hot sauce (i use Frank’s)
▪20g or 1 1/4Tbsp worcestershire
▪15g (5 cloves) minced garlic
▪115g/1 stick butter (cold, cut into chunks)
▪Xanthan gum (verrrry small pinch)
Add hot sauce, worcestershire, and garlic to a small saucepot over medium high heat and stir. Bring to a simmer then reduce heat to medium low to reduce by about half. Reduce heat to low add in butter and whisk constantly until melted and emulsified. Off heat, whisk in a tiny pinch of xanthan gum.

This Canadian family has been on the road from Montreal for over a year in their 40ft 2009 Freight Liner Bus. With four young kids, all boys, they designed the rig to accommodate a large family! There’s a massive kitchen table that can seat eight, two sets of bunk beds, a king-sized master, and a large bathroom with a shower, toilet, and mini sink.
Most of the interior furniture was recycled from other RVs, and other projects were self-built and highly creative! There’s surround sound, a spectacular roof deck, and an abundance of storage on the exterior of the rig.

Pour ma part, ce coffret m’a sauvée. Mal organisée pour prendre les cours, j’ai pu avoir pleins de conseils de chez moi. J’ai en plus eu de la chance car à la fin du visionnage du coffret, je n’avais aucune question et j’étais enfin sereine.
Mon mari a adoré le cours avec les papas et a voulu voir les autres du coup !!!
Je conseille ce coffret vraiment à toutes les futures mamans…
