VIDEO DESCRIPTION:

Barrett and Ashton are initially from Tennessee and had a ten-year plan to hit the road full-time someday. Once the pandemic hit, they quickly realized there was nothing they were waiting for, so why not now? A month later, they were on the road in a camper and soon transferred to van life.

This 2002 E350 has a 5.4 V8 engine and 32 1/2” all-terrain tires with a 2” body lift. The beefy setup matches the exterior storage that was fabricated by the previous owner for maximum strength and security. The interior has a simple layout with all of the necessities. Their garage holds what’s important to them, from running gear to yoga equipment and dog supplies. This couple is extremely outdoorsy and has the perfect van to get them where they need to go!

MIXED VEG PAKORA
Preparation time 10-15 minutes
Cooking time 20-25 minutes
Serve 2-4

Ingredients
For Batter
1 ¼ cup Gram flour, बेसन
Salt to taste, नमक स्वादअनुसार
¼ tsp Carom seeds, अजवाइन
1 tsp Baking soda, बेकिंग सोडा
½ cup Water, पानी
1 tbsp Curd, beaten, दही
Water, पानी
1 tbsp Rice flour, चावल का आटा
1 ½ tsp Oil, तेल

For Stuffing Bhavnagri Chili
100 gms Paneer, grated, पनीर
1 tbsp Coriander leaves, finely chopped, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
2 tsp Green chutney, हरी चटनी
2 tbsp Nylon sev, सेव
½ tsp roasted Coriander seeds, crushed, धनिया के बीज
6-7 Bhavnagri chillies, भावनगरी मिर्च

For Pakora
2 medium size Onion, rings, प्याज
100 gms Paneer, cut into medium size cube, पनीर
1 large Potato, medium slice, आलू
1 Tomato, slice, टमाटर

For Bhajiya
1 medium size Onion, slice, प्याज
1 medium size Potato, thinly julienned, आलू
¼ cup Spinach, shredded, पालक
½ tsp roasted Coriander seeds, crushed, धनिया के बीज
¼ tsp Fennel seeds, सौंफ़
¼ tsp Cumin seeds, जीरा
¼ tsp Carom seeds, अजवाइन
Salt to taste, नमक स्वादअनुसार
2 Green chillies (chopped & less spicy) हरी मिर्च
¼ tsp Turmeric powder, हल्दी पाउडर
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
⅓ cup Gram flour, बेसन

Other Ingredients
Oil for frying, तेल तलने के लिए
Nylon sev (for coating) सेव
2-3 Green chillies (slit & less spicy) हरी मिर्च

Process
For Batter
In a bowl, add gram flour, salt to taste, carom seeds, baking soda, water as required and mix it well.
Now, add beaten curd and mix it, add water as required and make smooth batter.
Add rice flour, oil and mix everything well and keep it aside for 9-10 minutes.

For Stuffing Bhavnagri Chili
Slit the chillies and keep it aside for further use.
In a bowl, add paneer, coriander leaves, salt to taste, green chutney, nylon sev and mix it well.
Now, add roasted coriander seeds and give it a good mix.
Stuff the prepared mixture in the bhavnagri chillies.
Keep it aside for further use.

For Pakora
Cut the onions, potatoes and tomatoes into medium size slices.
Now, cut the paneer into medium size cubes.
Slit the bhavnagri green chillies into the middle and keep it aside for further use.

For Bhajiya
In a bowl, add all cut vegetables, roasted coriander seeds, fennel seeds, cumin seeds, carom seeds, salt to taste, green chili and mix it well. Squeeze the vegetables properly and remove the excess water.
Now, add turmeric powder, ginger garlic paste and mix, then add gram flour and mix everything properly.
Keep it aside for further use.

For Frying
Dip the potatoes, onion, paneer, and tomato slice into the batter and fry on moderate heat
Once the vegetables are half done, remove and keep it aside.
Now, dip the stuffed bhavnagri green chillies into the batter and coat with a nylon sev and place into hot oil, once green chillies are cooked well, remove it on a absorbent paper and keep aside for further use.
Now, add bhajiya mixture in small parts and deep fry until it’s crisp from all the sides
Remove and keep it aside for further use.
Add green chili into batter and place into hot oil and fry until nice crispy texture on it.
Now, deep fry the half done pakoras on moderate heat until crispy.
Transfer it on a platter and serve hot with green chutney or tomato ketchup.

BUDGET BASEMENT LIVING ROOM MAKEOVER/BEST TIPS FOR CREATING A BRIGHT AND COZY SPACE

In this video I make over the family room/living room in a home that has not been updated since the 1980’s. In the process of making over this dated space, I share some of my best ideas tips for creating a bright and cozy space (even in a basement). These tips include painting the walls and ceiling with paint containing undertone (blue and green work well), painting doors and trim; installing a budget friendly flooring such as floating carpet tiles, adding plenty of lighting and mirrors, disguising problem areas, freshening up what you already own, adding thrifted furniture, wall art and accessories, and providing plenty of storage (because we love to use our basements for storage).

Ina throws open the doors of her Hamptons home for delicious food, dazzling entertaining ideas and good fun on Barefoot Contessa.

Salmon Cured with Dill and Pernod
RECIPE COURTESY OF INA GARTEN
Level: Easy
Total: 2 days 15 min (includes curing time)
Active: 15 min
Yield: 20 to 30 servings

Ingredients

1 (3-pound) center-cut fresh salmon fillet
1 large bunch of fresh dill, plus extra for garnish
1/2 cup kosher salt
1/2 cup sugar
2 tablespoons of Pernod
2 tablespoons whole peppercorns, crushed
1 tablespoon whole fennel seeds, crushed
Thin, dark pumpernickel bread, for serving
Gravlax Sauce, for serving, recipe follows

Gravlax Sauce:

2 tablespoons Dijon mustard
1 tablespoon honey mustard
1 teaspoon whole-grain mustard
1/2 teaspoon ground mustard
1 1/2 tablespoons sugar
2 1/2 tablespoons good white wine vinegar
2 1/2 tablespoons good olive oil
1 1/2 tablespoons grapeseed oil
2 tablespoons minced fresh dill
1/2 teaspoon kosher salt

Directions

Cut the salmon fillet in 2 pieces crosswise and place one piece in a deep dish, skin side down. Combine the salt, sugar, peppercorns, and fennel seeds in a small bowl. Wash and shake dry the dill and arrange it over the fish. Sprinkle dry mixture evenly over the dill and salmon. Add Pernod over the top of salmon. Place the other piece of salmon over the dill and spices, skin side up. Cover the dish with plastic wrap or aluminum foil. Place a smaller dish on top of the plastic wrap and weight it with heavy cans. Refrigerate the salmon for at least 2 to 3 days, turning it every 12 hours and basting it with the liquid that collects.

To serve, lay the salmon fillets flat on a cutting board and scrape off most of the dill and spices. Slice with a long, thin knife, as you would for smoked salmon. Lay the slices of bread on a cutting board, spread with the Gravlax Sauce, and place a slice of salmon on top, covering the bread completely. Cut each bread slice in half, decorate with a sprig of dill, and serve at room temperature.

Gravlax Sauce:
Yield: 3/4 cup

Whisk together the Dijon mustard, honey mustard, whole-grain mustard, ground mustard, sugar, and vinegar in a medium bowl. Combine the olive and grapeseed oils in a small measuring cup. Slowly add the oil mixture to the mustard mixture, whisking constantly, until emulsified. Stir in the dill and salt.

Boulder Shoulder Workout (HIT ALL 3 HEADS!)

If you are looking for a boulder shoulder workout to get bigger delts, then you’ve come to the right place. In this video, I am going to show you a workout to get bigger shoulders by hitting all three heads – the front delt, middle delt, and rear delt. I am not only going to show you what exercises to do, but I am going to give you the sets and reps too so you have a game plan for big delts.

In order to get big delts, you need to target all three heads to create a rounded, full looking shoulder. That means effectively targeting each one through exercise selection and performance. That means getting a full contraction as well as achieving stretch on the individual muscles too.

To begin this workout for big shoulders, we need to start pressing and start pressing heavy. Grab a pair of dumbbells and perform the seesaw press; pressing one dumbbell up overhead and lowering the other at the same time. You want to imagine yourself not just letting the weight lower on its own, but to actively pull it down. If you want to, you can substitute the seesaw press with a heavy barbell overhead press or even a landmine press. Any of these options are a great choice and are perfectly fine to overload the delts in a pressing motion.

Grab a weight that will allow you to fail in the 8-10 rep range for your first set. On your second set, you will be using a weight that causes failure in the 6-8 rep range. On sets 3 and 4, you will use the same weight, utilizing rest-pause to achieve your target reps if need be. Immediately finishing sets 3 and 4, you will drop a single dumbbell and perform over & backs to failure. If you chose the OHP, you will be performing a push press. Decided to do the landmine press? Great, just perform a landmine thruster as your burnout.

Next up, we have to target the middle delt in our boulder shoulder workout and the exercise we are going to utilize here is the cable lateral row. The alternative option to perform here is the side lying lateral raise, done with simply a bench and a dumbbell. These exercises are great options in any shoulder workout because the nature of the movements places the middle and rear delts on stretch. We know that in order to achieve maximum muscle activation, taking a muscle through full stretch into full contraction is key.

For this exercise you will be performing 3 sets of 8-10 reps on each side

The third spot of this workout for big shoulders is reserved for targeting the middle and rear delts together with a heavier weight option. This exercise selection is the hip hugger. It is important to note that you want to bring your elbows back behind and away from your body. Too often, when I see this exercise performed, people end up doing a regular shrug. Shrugging the weight up isn’t going to hit the delts effectively, in fact, you’d be targeting your traps instead. If you do the hip huggers correctly, you are going to light up those rear and middle delts.

You will be doing this exercise for 3 sets of 6-8 reps.

Now, to create a full, rounded, boulder looking shoulder, you NEED to hit the rear delts. Too often we focus on the fullness of the front and middle delts whilst forgetting about the smaller muscle head on the backside. If we are going to hit this muscle, then what better way to do it than with my favorite exercise; the facepull?! The key here is to make sure that you are getting those elbows and hands as far back as we can to not only achieve the maximum amount of external rotation, but to take the muscle through to its fully contracted state.

The facepull is done for 2-3 sets of 12-15 reps.

Last but not least in our workout for bigger shoulders, you are going to perform either the incline stretch front raise or the cable stretch front raise. Either option here is great for putting the front delt on stretch prior to achieving its contracted position. With the dumbbells, you are allowing gravity and the weight of the dumbbells to pull your arms into extension behind your body. In the case of the cables, they too are pulling your arms back behind your body into extension.

Either option you choose, you are doing them for 2-3 sets of 8-10 reps.

KADHAI GOSHT – There’s always that one special Sunday dish that we never get tired of.. This is mine! Sharing my recipe for an easy, spicy Mutton curry.

𝗖𝗵𝗲𝗰𝗸 𝗼𝘂𝘁 𝘁𝗵𝗲𝘀𝗲 𝗿𝗲𝗰𝗶𝗽𝗲𝘀 𝘁𝗼𝗼:

KADHAI GOSHT
Preparation time 10 minutes
Cooking time 30-40 minutes
Serve 2-4

Ingredients
For Pressure cook Mutton
2-3 tbsp Ghee, घी
1 inch Cinnamon stick, दालचीनी
1 Bay leaf, तेजपत्ता
2 large Onion, roughly slice, प्याज
1 kg Mutton , curry cut, (with bones) मटन
Salt to taste, नमक स्वादअनुसार
6-7 Garlic cloves, लहसुन
3 large Tomato, slight slit, टमाटर
1 tbsp Ghee, घी
2-3 Green chillies, less spicy, हरी मिर्च

For Masala
2 tbsp Coriander seeds, धनिया के बीज
½ tsp Cumin seeds, जीरा
¼ tsp Fennel seeds, सौंफ
12-15 Black peppercorns, काली मिर्च के दाने
1 tsp Stone flower (optional) दगड़ फूल
2-3 Cloves, लॉन्ग
1 Black cardamom seeds, बड़ी इलायची के दाने
Salt to taste, नमक स्वादअनुसार

For Kadhai Gosht
Pressure Cooked Mutton, पका हुआ मटन
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
⅓ cup Curd, beaten, दही
2 ½ tbsp Prepared Masala, तैयार किया हुआ मसाला
1 tsp Chili flakes, चिली फ्लेक्स
1 tsp Dry fenugreek leaves, crushed, कसूरी मेथी
1 tbsp Tender Coriander stem, chopped, धनिया के डंठल
1 cup Water, पानी
½ tsp Dry fenugreek leaves, crushed, कसूरी मेथी
¼ inch Ginger, peeled, julienned, अदरक
3-4 Bhavnagri chillies, भावनगरी मिर्च

½ cup Water, पानी

For Garnish
Coriander sprig, धनिया पत्ता
Ginger, julienned, अदरक

Process
For Pressure Cook Mutton
In a pressure cooker, add ghee when it gets hot, add cinnamon stick, bay leaf and onion and let it saute for a minute.
Now, add mutton, salt to taste, tomato, garlic, green chilli and ghee and cook for a minute on high flame.
Now, cover it with the lid and take 10-12 whistles.
Once mutton gets cooked, open the lid and transfer into kadai or lagan.
Remove the skin of tomatoes.

For Masala
In a small shallow pan, add coriander seeds, cumin seeds, fennel seeds, black peppercorns, stone flower, cloves, black cardamom seeds, salt to taste and roast until the spices get fragrant.
Remove into a tray and transfer into a mixer grinder and grind into coarse powder.
Keep it aside for further use.

For Kadhai Gosht
In a kadhai or lagan, add prepared pressure cooking mutton, and saute it for 5-6minutes on moderate heat.
Add water and saute it well, add turmeric powder, kashmiri red chili powder and saute it well.
Once masala is cooked well, add beaten curd and saute it for 5-6 minutes on moderate heat.
Now, add prepared masala, chili flakes, dried fenugreek leaves, tender coriander stems and cook for 5-6 minutes.
Now, add water and cook well, add fried fenugreek leaves, ginger julienned, bhavnagri green chillies and water and let it cook for a while.
Once the mutton gets cooked properly, remove into a serving plate and garnish with coriander sprig and ginger julienned.
Serve hot.
