Condo Makeover: A Dated Space Is Revamped For Modern Family Life

Designer Karin Bennett worked alongside contractor Marino Scopelleti of Sunnylea Homes to transform a family of four’s dated condo into a modern oasis. In the new kitchen, floor-to-ceiling flat cabinets painted in Benjamin Moore’s Cabbage Patch add depth, while hits of wood and marble-look quartz create a striking contrast. See how the cramped dining space was converted into a gorgeous banquette with custom storage and statement lighting. In the living room, a vertical white oak channeled wall with an integrated TV and electric fireplace creates an eye-catching display.

Traditional ragù alla bolognese, with fresh egg tagliatelle

***RECIPE, SERVES FOUR, IS EASILY MULTIPLIED***

For the sauce

1-1.5 lb (454-681g) ground meat (typically a combination of beef and pork)
2-3 oz (57-85g) pancetta or other fatty cured meat (this is skippable)
2 celery stalks (I also save the leaves for garnish)
2-3 carrots
1/2 an onion
white wine (can use water instead plus a splash of white balsamic vinegar)
chicken stock (I used a whole 1 quart, 946 mL carton but you could replace some or all with plain water)
milk
tomato paste
butter or olive oil
salt
pepper

For the pasta

6 eggs
all-purpose flour (about 3 cups, 360g plus more for dusting)
olive oil
salt

Dice the pancetta finely and throw it into a cold pan big enough to hold all your sauce. Turn the heat on medium and let it render out its fat while you dice your carrots. (If you’re skipping the pancetta, just heat a film of olive oil or butter in the pan.) Stir the carrots into the pan. Dice the celery and stir it in, followed by the onion. At this point you may need some more fat to cook the vegetables, so put in a knob of butter or a glug of olive oil. Cook over moderate heat until the vegetables are soft but not brown. Dump them back out onto the cutting board.

Put the ground meat into the pan and turn the heat up higher. Stir the meat and break it up with a wooden spoon until you’ve evaporated off most of its water and you’ve gotten some good browning. Stir in a big squeeze of tomato paste and then deglaze with enough white wine to just submerge everything. Stir in a pinch of salt and a few grinds of pepper, reduce the heat and simmer for at least two hours (4-5 hours is better). Stir occasionally and replenish the liquid with enough stock to keep everything just barely submerged.

At some point while you’re simmering, make the fresh pasta dough. Beat the eggs smooth with a glug of olive oil and pinch of salt. Stir in as much flour as the eggs will take. Knead the dough with additional flour until it’s reasonably smooth and only a little sticky. Cover and let rest for at least 20 minutes.

When you’re about a half hour away from dinner, let the sauce evaporate out most of its water and then pour in just enough milk to get everything submerged again. Simmer gently, stirring occasionally until the sauce is thick. Now would be a good time to put a pot of salted water on the boil for pasta and to roll the dough out.

Put your dough ball on a clean counter, scatter heavily with flour and roll with a rolling pin, turning and flipping frequently to make sure every surface is well-floured and doesn’t stick. Keep rolling until you’ve got the sheet as thin as you can reasonably get it. Again make sure it’s well-floured and then fold it over on itself a few times and transfer to a cutting board. Cut it into wide strips for tagliatelle. Scatter the strips with more flour and toss them to get them unfolded and separated.

When the sauce is thick, taste it for seasoning and add salt, pepper, etc. (I might give it a splash of vinegar and maybe even a pinch of sugar — call the Pasta Police.)

Drop the pasta in the boiling water and cook for a few minutes until it swells up noticeably and floats strongly to the surface. Drain, leaving a little pasta water behind to mix with the sauce. Stir in as much sauce as you want to coat all the pasta and serve — grated cheese is not traditional but live your own life.

Voodoo Wings

Something magical happens to these grilled wings when you toss them in this sweet and spicy Voodoo Sauce – Cajun and Caribbean flavors collide producing a tantalizing sweet & spicy flavor with notes of brown butter and vanilla.

For this cook I’m running my trusty 22” Weber kettle set up with a charcoal Vortex http://bit.ly/H2QVortex​ . You simply can’t beat the way the Vortex cooks chicken wings. The skin browns and turns crispy on both sides; you can actually see the fat rendering away on the skin. I add 1 small piece of peach wood directly over the vortex for smoke.

To set up the grill: Get a chimney of Royal Oak briquettes going using a couple tumble weed fire starters. Place the Vortex http://bit.ly/H2QVortex​ on the bottom fire grate in the weber and pour in the hot coals. Set the cooking grate in place and give it just a few minutes to get hot. The dial on the Weber will climb rapidly to around 550 degrees. (don’t panic this isn’t the actual grate temp)

Place the wings on a sheet pan and pat dry with paper towel. You want to get as much moisture off as possible, so the skin will crisp. I’m using whole wings for this recipe but you could cut them up into individual pieces or buy party wings.

To get the Cajun flavor party started I hit the wings with a good coat of my King Craw Seasoning http://bit.ly/KingCraw​ . It’s a little on the spicy side but not hot enough to blow your head off and the salt is balanced so you don’t have to worry about over doing it with this one. You can substitute your favorite cajun seasoning just watch the salt content.

Arrange the wings on the outer edge of the cooking grate away from the vortex. The heat will roll down the top and cook the wings. Start out with the exhaust vent in the 12 o’clock position and turn the lid 45 degrees every 15 minutes. This helps the heat flow evenly around all the wings. After 30 minutes flip the wings and continue cooking. While the wings are on the grill go ahead and make the Voodoo sauce.

VooDoo Wing Sauce
– 1 stick Butter
– 2 Tablespoons minced onion
– 2 cloves minced garlic
– 1/2 cup dark brown sugar
– 2oz dark rum
– 2oz Killer Hogs Hot Sauce http://bit.ly/KHHotSauce​
– 1 teaspoon Crushed Red Pepper
– 1 cup Killer Hogs Vinegar Sauce http://bit.ly/TheVinegarSauce​

Melt butter in a sauce pan over medium heat. Add onion and garlic and cook for 2-3 minutes. Add dark brown sugar, red pepper flakes, and rum. Reduce for 5-7 minutes to cook off alcohol. Remove from heat and add Hot Sauce and Vinegar Sauce. Store in a jar until ready to use.

Get the wings off the grill when they hit 190-195 internal; I use a Thermoworks Thermapen http://bit.ly/H2QThermapen​ to check the internal temperature.

I know that wings are done at 165 internal; but trust me the skin is better, the fat is completely rendered, and the bones come out clean when you take them to 190.

Place 4-5 wings in a large bowl and pour in a little of the Voodoo sauce. Toss the wings until they’re completely coated and pour out onto a platter or cutting board. Repeat this step until all the wings are sauced. I like to serve them with a kicked up Cajun ranch dipping sauce and sticks of celery or carrots.

Voodoo Ranch Dip
– 1 cup Blue Plate Mayo
– 1 cup Sour Cream
– 1 packet Ranch seasoning
– 1 Tablespoon Killer Hogs Hot Sauce http://bit.ly/KHHotSauce​
– 1 teaspoon Malcom’s King Craw Cajun seasoning http://bit.ly/KingCraw​
– 1 pinch Cayenne Pepper (more if you like it spicy!)
Combine ingredients in a small bowl and cover. Refrigerate for at least 3 hrs before serving.
