Torta di involtini di verza con prosciutto e fontina – La Prova del Cuoco 19/11/2015

http://www.laprovadelcuoco.rai.it – Ingredienti per 6 persone: 1 verza 200 g di prosciutto cotto affettato spesso (in 4 fette) 150 g di fontina 80 g di parmigiano grattugiato 3 patate 2 rotoli di pasta sfoglia rettangolare pangrattato burro alloro olio extravergine di oliva sale e pepe Procedimento: Sfogliare la verza, tenendo da parte 12 foglie esterne. Tagliare grossolanamente la parte interna della verza e tagliare a cubetti la fontina. Sbucciare e tagliare a cubetti le patate. tagliare il prosciutto a listarelle. Scottare per circa 6 minuti le foglie esterne della verza in acqua bollente profumata con l’ alloro e un filo di olio. Scolarle ed asciugarle. Rosolare il prosciutto e la verza sminuzzata (parte interna), unire le patate, salare, incoperchiare e cuocere per almeno 20 minuti. Togliere dal fuoco e aggiungere la fontina ed il l parmigiano. Lasciare intiepidire. Farcire ciascuna foglia di verza con il composto a base di prosciutto. Chiudere a fagottino ed avvolgerli singolarmente con la pasta sfoglia ritagliata in strisce della larghezza di circa 2,5 cm. Posizionare distribuendo gli involtini su una teglia foderata con carta da forno, imburrata e spolverata con pangrattato. Decorare a piacere con gli avanzi di pasta sfoglia ed infornare 200°C per 10 minuti. Servire caldi.

เรื่องราววิถีความผูกพันสองแผ่นดินของไทย และ สปป.ลาว ที่ บ้านเหมืองแพร่ ต.นาแห้ว อ.นาแห้ว จ.เลย ซึ่ง “บ้านเหมืองแพร่” เป็นชื่อหมู่บ้านที่ใช้ชื่อเดียวกันทั้งฝั่งไทย และฝั่ง สปป.ลาว ที่ห่างกันเพียงข้าม “แม่น้ำเหือง” ที่ห่างไปไม่กี่ก้าวก็สามารถเข้าสู่ สปป.ลาว ได้ ด้วยการข้ามแพไม้ไผ่ ซึ่งการข้ามแพที่นี่ไม่ต้องทำให้ยุ่งยาก แค่สาวเชือกเท่านั้น วิธีนี้ใช้มาตั้งแต่สมัยปู่ย่าตายาย
นอกจากความสัมพันธ์ของคนบ้านเหมืองแพร่ทั้งสองฝั่งจะไม่มีอุปสรรคใด ๆ กั้นได้แล้ว บ้านเหมืองแพร่ฝั่งไทย ยังมีวิถีชีวิตที่พึ่งพิงธรรมชาตินั่นคือ การเลี้ยงวัวเลี้ยงควายแบบปล่อยให้หากินในป่าภูหัวฮ่อม ซึ่งทำกันมานาน เป็นวิถีเลี้ยงสัตว์แบบโบราณนับร้อยปี โดยเฉพาะในหน้าแล้ง แทบทุกครัวเรือนจะปล่อยวัว ปล่อยควายไปหากินในป่า เพราะมีอาหาร ต้นหญ้า และต้นไม้ที่สมบูรณ์ โดยเจ้าของจะเข้าไปดูทุก ๆ สัปดาห์ วิธีการคือต้องเดินขึ้นไปบนภูเขา หรือไม่ก็ต้องขี่มอเตอร์ไซค์ไปเรียกหา เมื่อวัวควายได้ยินเสียงจะจำได้ว่าเจ้าของมาหา สิ่งที่สำคัญที่สุดเวลาเข้าไปดู ก็คือต้องเอา “เกลือ” ซึ่งเป็นอาหารที่วัวควายชอบกิน ไปให้พวกมัน พอกินจนอิ่ม วัวควายก็จะขึ้นเขาไปใช้ชีวิตต่อ

An eight-time-Emmy-nominated makeup and prosthetics designer, Vincent Van Dyke has worked on medical shows like “Grey’s Anatomy,” “Private Practice,” “Pure Genius,” “The Resident,” “Code Black,” and “Nip/Tuck,” along with first-responder dramas like “9-1-1” and “Station 19.” The Orange County Sheriff-Coroner’s Department has hired Vincent to make fake autopsy bodies and dummies as training aids — his medical effects are that lifelike.
