Cauliflower Toasts

Level: Easy

Yield: 6 servings

Ingredients

1 small head cauliflower (2 pounds)
4 tablespoons good olive oil
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
12 ounces Italian mascarpone cheese, at room temperature
6 ounces Gruyere cheese, grated
4 ounces thinly sliced prosciutto, julienned
1/4 teaspoon ground nutmeg
6 large slices country-style bread
Paprika
Freshly grated Italian Parmesan cheese
2 tablespoons minced fresh chives
Flaked sea salt, such as Maldon

Directions

Preheat the oven to 400 degrees F.

Turn the cauliflower upside down on a cutting board. Cut off and discard most but not all of the stems, then cut the florets into small, 1/2-inch clusters. Place the florets on a sheet pan, toss them with the olive oil, red pepper flakes, 1 teaspoon salt, and 1/2 teaspoon black pepper, and spread them out in a single layer. Roast for 25 to 30 minutes, tossing two or three times, until the florets are tender and randomly browned. Set aside to cool for 10 minutes.

Set the oven to broil and arrange a rack 6 inches below the heat.

Transfer the florets to a large mixing bowl and add the mascarpone, stirring to coat the florets evenly. Stir in the Gruyere, prosciutto, nutmeg, 1 teaspoon salt, and 1/2 teaspoon black pepper.

Toast the bread in a toaster until lightly browned, and place in a single layer on a sheet pan lined with foil. Mound the cauliflower mixture evenly on each toast and dust with paprika. Broil the toasts for 2 to 4 minutes, until browned and bubbling. (Watch them carefully!) Transfer to plates and sprinkle with Parmesan, the chives, and sea salt. Serve hot.

I am completely enamored of different types of glass jars and so I thought maybe we could find a way to mount these glass jars onto a wood board and turn them into an herb garden. And so I’m going to show you how easy it can be to do that. The next unique container idea was inspired by my son’s old rain boots. He did not want me to get rid of them even though he had out grown them years earlier. And so, a planter was born. You can use little kids’ rain boots, you can use clogs or shoes that you’ve out grown. Make sure to drill a couple of drainage holes underneath, but I think for a little bit of a quirky or whimsical garden space, the idea of growing flowers in a little garden shoe or clog is absolutely adorable. So, this was something that I found at a garage sale, we repainted it, distressed it a little bit. You can do that or you can leave it as is if you like a more rustic look. Because this had all of these little drawers, it became the perfect little place to do individual plantings. Now before you start a project like this, you need to make sure you put some kind of a liner in the drawers because when you water the plants, you want to make sure you don’t want all of the dirt to seep through. So, put a liner in, then put some stones on top of that and then your potting soil. Who would have thought your little dresser drawer would have turned into something so fabulous as this. So, use your imagination, look around your home, find some things that you love and see if there’s a way you can transform it into a very unique container garden.

Bread Pudding
Serves 8

Ingredients:
butter
3 cups milk
6 eggs
¾ cup granulated or brown sugar
1½ teaspoons pure vanilla extract
1 teaspoon ground cinnamon
pinch ground nutmeg
pinch salt
12 cups cubed challah or brioche (or other egg-based bread), cut into 1-inch cubes (about 1-pound loaf)
½ cup any flavoring ingredient (chocolate, dried berries, apples, etc.…)

Directions:
1. Grease a 7-inch by 11-inch baking pan (ceramic or metal) with butter.
2. Combine the eggs, sugar, vanilla extract, cinnamon, nutmeg and salt in a bowl. Beat well. Add the milk and whisk.
3. Toss the bread cubes and flavoring ingredient together and place into the greased baking pan. Pour the egg custard over the top. Press down on the bread cubes to help the bread absorb the custard and let the pudding sit until most of the liquid has been absorbed. In the meantime, pre-heat the oven to 350ºF.
4. Transfer the bread pudding to the oven and bake in the 350ºF oven for one hour, or until a skewer inserted in the center of the pudding comes out clean, the top is nicely browned and springs back when you touch it.
5. Let the pudding cool to an edible temperature. Then serve with some maple syrup, whipped cream or a sauce.

8 Roma tomatoes, diced
2 cloves garlic, minced
⅓ cup fresh basil, finely chopped
salt, to taste
pepper, to taste
drizzle of extra-virgin olive oil

In a large mixing bowl, combine all ingredients. Toss to coat.
Serve on your favorite bread and enjoy!

Per 1 cup, yields 5

► DIY PEANUT BUTTER:
16 oz peanuts
salt
cinnamon
other seasonings if desired

Add all ingredients to a food processor and blend until smooth butter forms.
Transfer to a jar to store.

► ROASTED VEGGIES:
1 lb carrots, sliced into rounds
1 lb green beans, cleaned and trimmed
drizzle of olive oil
salt, pepper, to taste

Preheat oven to 425°F (220°C).
On a baking sheet lined with parchment, add veggies.
Drizzle with oil, season to taste, & toss to coat.
Roast ~25 minutes, until softened & just beginning to brown on top.

► POTATO ZUCCHINI SOUP:
2 large potatoes, peeled and cubed
4 zucchini, cut into thick rounds
drizzle of oil
salt and pepper, to taste
2 cloves garlic, minced
1 cup water
½ cup broth
½ cup milk of choice

Preheat oven to 425°F (220°C).
On 2 baking sheets lined with parchment, toss potato & zucchini in oil and seasonings
Roast both pans for 25-30 minutes, until vegetables are browning.
Add oil and garlic to a saucepan over medium heat and sauté for 1-2 minutes.
Add water, broth, milk, & roasted vegetables to saucepan.
Bring to a boil, reduce heat to low, and simmer covered for 20 minutes.
Once vegetables are fork tender, pour contents of saucepan into a blender or food processor & blend, until smooth or chunky as preferred. (An immersion blender works, too!)
Season to taste.
Yields 6 cups (4 servings).

Per serving of 1 ½ cups:

Hoe maak en plaats je een opzetframe met kozijnfolie? | Duurzaam Den Haag

In deze video legt Erik aan je uit hoe je een opzetframe maakt met twee lagen kozijnfolie. Hiermee kan je een raam met enkelzijdig glas isoleren.

Waarom isoleren?
Isoleren kan op veel manieren. Vaak bestaat isolatie uit een laag stilstaande lucht. Bijvoorbeeld bij dubbelglas, maar ook bij een schuimlaag in je muur of met een dikke trui. Dingen met een hoge warmteweerstand houden warmte binnen. Omdat een raam dun is, heeft het van zichzelf maar weinig warmteweerstand. Zeker bij ramen van enkelglas, omdat daar geen stilstaande luchtspleet zit.

Een oplossing hiervoor is kozijnfolie, dat je op het kozijn van het raam plakt. Hiermee maak je een ruimte van stilstaande lucht tussen het glas en de folie. Daardoor neemt de warmteweerstand toe. Die luchtspleet heet een spouw.
