Bake on 400 degrees for 30-40 minutes

Bucatini Carbonara

Yield: 4 to 6 servings
Ingredients
1 1/2 cups 1/4-inch diced pancetta
1 cup 1/4-inch diced yellow onion
Kosher salt and freshly cracked black pepper
5 large eggs
1 cup grated Parmigiano-Reggiano
1 pound bucatini pasta
1 tablespoon chopped Italian parsley
Directions
Cook the pancetta in a large nonstick skillet over medium heat until crisp and the fat has rendered, 5 to 7 minutes. Remove the pancetta to a paper-towel-lined plate and set aside. Add the onions to the pan with the drippings and cook until translucent, 3 to 5 minutes. Season with salt and pepper, and then reduce the heat to keep warm.
Separate the eggs and place the yolks in a large bowl (reserve the whites to use in another recipe). Whisk together the egg yolks and half the Parmigiano-Reggiano and season with salt and pepper. Add the egg mixture to a large stainless bowl with the onions and mix well.
Cook the pasta in salted, boiling water until al dente (according to pasta directions). When the pasta is just about finished, strain the pasta and transfer directly from the pot of water to the mixing bowl with the onions. Using tongs, mix well so the egg mixture coats the pasta evenly and cooks from the residual heat. Add about 3/4 cup of pasta water to fortify the sauce. Fold in the remaining Parmigiano-Reggiano, crisped pancetta (reserve a little for garnish) and season with salt and pepper.
Serve immediately, garnished with the reserved pancetta and parsley.

Prepare Spicy BBQ Sauce:
-Hot sauce 5 tbs
-Tomato ketchup 4 tbs
-Brown sugar powdered 2 tbs

-Paprika powder 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Soy sauce 2 tbs
-Sirka (Vinegar) 1 & ½ tbs
Directions:
-In a bowl,add chicken wings,red chilli powder,salt,paprika powder,ginger garlic paste & mix well,cover & marinate for 15 minutes.
-In a dish,add all-purpose flour,red chilli powder,salt & mix well.
-Now coat marinated chicken wings with dry flour mixture.
-In a wok,heat cooking oil & deep fry chicken wings on medium low flame until golden brown & crispy.
Prepare Spicy BBQ Sauce:
-In a wok,add hot sauce,tomato ketchup,brown sugar,salt,paprika powder,red chilli crushed,soy sauce,vinegar & mix well.
-Turn on the flame & cook for a minute.

▶️ RECIPE INGREDIENTS LIST: ( 3 servings approx.)
2 Tablespoon Cooking oil (I have used LIGHT olive oil as its good for cooking in higher temps)
2 cups / 1 can (540ml) Cooked Chickpeas
1 Teaspoon Mustard Seeds
10 to 12 Curry leaves – Fresh, dry or frozen
1 cup / 135g Onions – chopped
1+1/2 Tablespoon Garlic – finely chopped
1/2 Tablespoon Ginger – finely chopped
1 Teaspoon Turmeric
1/2 Teaspoon Ground Black Pepper
1/4 Teaspoon Cayenne Pepper (OPTIONAL)
1/8 Teaspoon Asafoetida
1+1/2 Cup Vegetable Broth (Low Sodium)
1+1/2 Cup Water
1+1/2 Cup Coconut Milk (Full Fat)
1/4 Cup / 12g Cilantro (Coriander leaves) – finely chopped
1/2 Tbsp Lime (or lemon juice) or to taste
▶️ METHOD:
Drain 1 can or jar of chickpeas and set aside.
To a heated pan add the oil. Heat the oil and then add the mustard seeds. Allow the mustard seeds to crackle. AS SOON AS THE SEEDS STARTS TO CRACKLE, REDUCE THE HEAT TO LOW, THIS WILL PREVENT THE SEEDS FROM BURNING. Add the curry leaves and fry is for a few seconds. Now add the chopped onion and 1/4 Tsp salt. Increase the heat to medium. Fry on medium heat until the onions start to brown. It will take about 5 minutes or so. Adding salt while frying the onions will release it’s moisture and help it cook faster so please don’t skip it.
Add the chopped garlic and ginger and fry for 1 minute or until fragrant. Add the cooked chickpeas, salt, vegetable broth, water and mix well. Cover the lid and bring to a boil. Once it starts to boil, reduce the heat to medium-low (or low depending on the heat of your stove) and cook for 15 minutes. after 15 minutes uncover and mash half of the chickpeas. Turn the heat back to medium and bring it to a boil. Add the coconut milk and cook for another 1 to 2 minutes or to the desired consistency. Do not overcook the coconut milk. Turn off the stove.
Garnish with cilantro and lime/lemon juice. Mix well. Cover the lid and allow it to rest for 2 to 3 minutes for the flavours to blend.
Serve with naan and/or steamed rice with a green side salad.

Finally our pool in our property here in Tuscany, Italy, is finished. This was quite an exciting week for us to finally see the lining added and the water arrive. In Italy, you need to also have a separate company that digs the hole, another company of builders who manage the cement foundation, the laying of the bricks and the border. We also used a third additional company to cut custom travertine for the border. For the actual pool itself we used a company called Piscine Castiglione. They do pools all over Italy. Every day I get so many emails and comments asking why you can’t locate the music I use or find it using Shazam. I purchase music licenses for almost all the music you hear in my videos. I buy them them from various royalty-free production music sites and most of the time they don’t list the performer because it’s music made only for film productions with an audio watermark throughout the entire track, unless you purchase the single-use license for $50-100 per track. I use a lot of opera so often I’ll reference the opera but I won’t be able to direct you to a recording of that specific performance that you could stream or buy on iTunes or Spotify. This Dining Table measures 3000 x 1000 x 760mm and is made from White Oak. As you could probably tell from this video, the weight and size of this table was a real challenge as the weight played a big role in the design and construction of this piece. It was my intention to make this giant table look as light as possible and by using minimal components and by adding angles to the legs I felt this objective was achieved.
A couple of things to note. As mentioned in the video, the bottom rail bent downwards due to the weight of the table top. This might seem a little strange, well it was certainly strange to me. The reason why it bent downward was because as the weight of the top put pressure on the legs, the legs flexed outward and because the cross halving joint was so tight, the outward motion of the legs pushed the ends of the bottom rail upward causing the middle to bend downward. Certainly something I could have never picked up in the design phase.
Another thing to mention is yes I painted the steel angle bars.

Fanta – 500 ml (16.9 fl oz)
To marinate 30 min
For the potatoes composition:

Ginger Chicken Recipe | Ginger Chicken Masala | Ginger Chicken Curry Recipe | Adraki Murgh | Chicken Curry Recipe | Ginger Chicken Gravy Recipe | Dhaba Style Ginger Chicken | Chicken Gravy
Ingredients for Spice Eats Home Chicken Curry:
(Tsp- Teaspoon; Tbsp- Tablespoon )
– Chicken – 500 gms. (with bones)
Whole spices for tempering:
– Green Cardamom- 4
– Cloves- 4
– Cinnamon- 2 small pieces
– Shah Jeera- 1/2 tsp
Spice Powders:
– Turmeric powder- 1/4 tsp + 1/4 tsp
– Red Chilli Powder- 1 tsp
– Coriander powder- 1 tsp
– Cumin Powder-1/2 tsp
– Garam Masala Powder-1/2 tsp
– Kashmiri Chilli powder- 1/2 tsp
Other Ingredients:
– Onions chopped- 2 medium (150 gms)
– Ginger Julienned- 2 tbsp(20 gms)+ for garnishing
– Green Chillies, sliced- 3
– Tomato purée- 3 tbsp ( readymade )
– Cashew paste- 10
– Kasuri Methi, roasted and powdered – 1/2 tsp
– Salt- 1 tsp
– Oil- 3 tbsp
Preparation:
– Chop the onions, julienne the peeled ginger and slice the green chillies.
– Use readymade tomato purée/paste for this recipe. In case not available, you can blend 2 medium fresh red tomatoes and use that instead.
– Make a paste of the cashew nuts. To do that add 10-12 cashew nuts in a grinder/blender and dry grind it into a powder. Now add 3-4 tbsp water and blend again into a smooth paste.
– As the curry gets nearly cooked, dry roast the Kasuri Methi for around 30 secs and leave it to cool. Now crush it lightly with your hand.
Process:
– Heat 3 tbsp oil in a kadhai and add the whole spices. Give a stir and then add the chopped onions.
– Fry on medium heat for around 6-7 mins till soft and then add the julienned ginger. Give a mix and fry on medium heat for 2 mins.
– Now add the chicken pieces and a pinch of turmeric powder. Give a mix and fry on medium high heat for around 2 mins till the colour of the chicken changes.
– Now add all the spice powders other than Kashmiri Chilli Powder, salt, mix and add a splash of water. Fry on low heat for around 3-4 mins. till oil separates.
– Now add the Cashew paste, readymade Tomato purée/paste, Kashmiri Chilli Powder and the sliced Green chillies. Give a mix and cook on low heat for around 5-6 mins till oil separates.
– Add 150-200 ml water, give a mix and cover and cook on low heat for around 15 mins till chicken is tender.
– Now remove the lid and add dry roasted and powdered Kasuri Methi and balance julienned ginger.
– Give a mix and simmer for around 2-3 mins.
– Lastly garnish with some more julienned ginger and sliced Green chillies.
– Serve with roti or rice.

1 Tbsp (20ml) – Peanut Oil
1 – Brown (Yellow) Onion, Roughly Chopped
10g (0.3oz) – Ginger, Minced
1/2 tsp (1g) – Ground Turmeric
1 Tbsp (7g) – Ground Coriander
1 1/2 tsp (3.5g) – Sweet Paprika
1/2 tsp (1g) – Kashmiri Chilli Powder
1 1/2 Tbsp (30g) – Concentrated Tomato Paste
1 Can (400g) – Chopped Tomatoes
1/4 – Lemon, Juiced
3/4 Cup (180ml) – Low Fat Cream

I throw using both a Rohde HMT 500 & 600 potter’s wheel and fire using Rohde kilns too, the electric is a TE-200 and the gas kiln is a KG-340.
