***RECIPE, SERVES 4-6***

2 lb (907g) beef tenderloin, trimmed of fat and silver skin and cut in bite-size chunks
2-3 shallots, peels and minced
1 lb (474g) white button mushrooms, trimmed and cut in half (I skipped this, FYI)
1/2 cup (118gmL) cognac or other brown liquor (optional)
2 cups (473mL) stock
8 oz (236mL) sour cream (you might not need all of it)
1 tablespoon cornstarch (you might not need all of it)
mustard
salt
pepper
sweet paprika
any other spices you want (I used garlic powder)
fresh herbs for garnish (I used thyme)
12 oz (340g) dry egg noodles
oil
butter

Either before you cook the meat or while you’re cooking the meat, boil the egg noodles in salted water and cook them a minute or two less than what the package recommends. Drain, then melt in a little butter to keep them from sticking to each other. Cover and they’ll hold until you’re ready to eat.

Season the beef chunks heavily with salt and pepper and coat in oil. Fry the meat in a very hot pan in 2-3 batches, getting the pieces as a brown as possible without fully cooking them. Dump them out to a plate.

If you’re doing the mushrooms, put some more oil in the pan and fry the mushrooms until brown and they’ve shrunk by about a third. Dump them out to a plate.

Put some more oil in the pan and fry the shallots for a couple minutes until soft. Deglaze the pan with the liquor (or stock), then pour in the stock.

Disperse the cornstarch in a small amount of cool water or stock until smooth, then slowly drizzle some of it into the stock while stirring aggressively. Boil to gelatinize the starch and keep adding slurry until the sauce is a little thicker than you want it in the end (the sour cream will thin the sauce out a bit).

Stir in as much sour cream as you want — it’ll need to melt before you can stir it in smooth.

Flavor the sauce to taste with mustard, salt & pepper, paprika and other spices. Stir in the beef (along with any resting juices) and mushrooms, and let simmer for a couple minutes until the meat is hot and cooked through. Stir in fresh herbs at the last second. Serve over egg noodles.

Frühlingsdeko basteln mit Dosen. Eine schöne Osterdekoration für die Theke, Fensterbank oder als Tischdekoration. DIY 2017, meine Dekoration mit Blumen als Video.

Es gibt so schöne Osterdekorationen und oder Frühlingsdekorationen die so einfach nachzumachen sind und noch nicht mal teuer sein müssen. Sie können aus täglichen Gebrauchsgegenständen, wie Konservendosen, Eierschalen gemacht werden, noch ein paar Bänder und Blümchen und schon ist meine schicke Osterdeko 2017 fertig.

Ich schaue ja auch gerne nach solchen Sachen und nicht jeder sieht alles, deshalb möchte ich euch einige nette Deko Ideen zum Osterfest oder einfach als Frühlingsdeko zeigen.
In diesem Video sind es schön dekoriere Dosen, die man als Blumenvasen oder Blumentöpfe verwenden kann.

ZUTATEN für 1 Brot:
• 500 g Vollkornmehl (z. B. Dinkel oder Weizen), alternativ 2/3 Vollkorn- und 1/3 normales Mehl
• 450 ml lauwarmes Wasser
• 1 Würfel Hefe
• 50 g Sonnenblumenkerne (können auch weg gelassen oder durch z. B. Kürbiskerne, gehackte Mandeln oder Rosinen ersetzt werden)
• 100 g geschrotete Leinsaat (kann weg gelassen oder durch z. B. Sesam oder Grünkernschrot ersetzt werden)
• 2 TL Salz
• 2 TL Brottrunk oder Obstessig (z. B. Apfel- oder Himbeeressig)
Das Brot im nicht vorgeheizten Backofen bei 200 Grad, Umluft 170 Grad, für 50 Minuten backen.

Sweet Potato Fries – vor allem in der amerikanischen Küche verbreitet – sind schnell zubereitet und eine willkommene Abwechslung zu den herkömmlichen Pommes Frites. Und auf dem Backblech zubereitet, sind sie außerdem auch noch relativ kalorienarm.

ZUTATEN für 2 Portionen:
– 500 g Süßkartoffelm
– 2 EL Öl
– 1 TL Salz
– 1 TL Paprika edelsüß
– optional etwas Pfeffer, Cayennepfeffer oder Chilipulver, je nach Geschmack auch Knoblauchgranulat oder -salz
Bei 220 Grad, Umluft 200 Grad, für 20-25 Minuten backen.

Crispy pork belly every time #shorts

Ingredients

– Pork belly (you want a piece from the centre of the belly preferably)
– Salt, lots of salt…
– Any seasoning or rub your little heart desires for the flesh

Method

1. The day before, take the pork from the packet and dry it really well with a paper towel.
2. Score diamond patterns into the skin but make sure you don’t cut past the fat, you just want to cut through the skin.
3. Place your pork belly onto a wire rack and season it heavily on the skin side.
4. Place in the fridge overnight.
5. The next day, pre-heat your oven to 180°C.
6. Take the pork belly from the fridge and brush off any excess salt on the top.
7. Season the flesh side with any barbecue rub or cracked pepper.
8. Place into the oven for 1 hour. After 1 hour, turn the oven up to 220°C on the grill or broil function but make sure your pork is still in the bottom half section of the oven.
9. Cook it like this for another 30 minutes or until the skin goes super crispy. Just be super careful you don’t burn the crackling at this point as all ovens are different.
10. After a total of roughly 1.5 hours in the oven, your pork belly should be super crispy and still juicy in the centre. Remove from the oven and let it rest for at least 25 minutes before you slice it.
11. Enjoy!
