1/2 brick extra firm tofu
Smart Bacon: http://www.lightlife.com/Vegan-Food-Vegetarian-Diet/Smart-Bacon
1/4 onion
1 tomato
1 potato
1/2 tsp Thyme
1/2 tsp Basil
1/2 tsp salt
1/2 tsp pepper
1 tbsp Hot Sauce
1 tsp turmeric
1 tsp Garlic Powder
1/4 cup Daiya Cheese
Start with 2 tbsp olive oil on med heated pan
dice potato and add to heat
1/2 tsp salt and pepper
dice up Smart Bacon and onion
add onions and smart bacon
crumble up tofu into pan
add spices and hot sauce
Add tomato diced
Add the Daiya Cheese
Steam Shells and roll filling into burritos

Her coastal garden and retail nursery is an hour north of San Francisco.
Daria and Bruce Shanks:

On the run and at a new kitchen we bring you vegan fettuccine alfredo. Yeah, it’s real good!
Make your own baked tofu http://full.sc/1bKy5t4
Fettuccine Alfredo
serves 4 to 5 / time 60 min
3 Tbs flour unbleached
6 Tbs olive oil
1 small onion diced
½ lb baked tofu
1 ½ to 2 cups shiitake mushrooms sliced
1/4 cup capers
1/2 tsp sea salt
1/2 tsp pepper
1/2 tsp sage dried
1/2 tsp thyme dried
2 cloves garlic grated
2 ½ to 3 cups almond milk
1 Tbs apple cider vinegar
1 scallion thinly sliced
1 lb vegan fettuccine
1. Bring pot of water to a boil for fettuccine.
2. Heat 3 Tbs oil in large frying pan on medium heat. Add onion, mushrooms, tofu and capers. Sauté for 5 min. Stir in garlic and continue to sauté for another 5 min.
3. Heat 3 Tbs of oil on medium heat in separate saucepan. Add flour and stir together to make a roux, about 3 or 4 min. Stir in almond milk, salt, pepper, sage and thyme. Turn heat to high and bring to a boil while stirring frequently.
4. Take frying pan with tofu mixture off heat and deglaze with apple cider vinegar. Put half of the mixture in a bowl and set aside and put the other half in the Alfredo sauce. Stir everything together.
5. Turn Alfredo sauce down to a low heat and simmer for about 30 min so it thickens up. Add about 90 percent of the scallion to the sauce and stir in.
6. Add fettuccine noodles to boiling pot of water. Boil until noodles are al dente. Remove from water and strain.
7. Scoop portion of pasta to saucepan and add desired sauce. Mix around to cover pasta in sauce. Transfer to a plate and garnish with the sautéed tofu mushroom mix and some scallion.

Watch as we make delicious vegan cheese sticks with Daiya Cheese. Great to make for parties to enjoy with friends or all by yourself. Cholesterol free!
Cheesy Zombie Fingers (Vegan Cheese Sticks)
Makes about 10-12 sticks / time 80 min
2 cups vegan cheese shreds i.e. Daiya Shreds
1 ½ cups vegan breadcrumbs
5 Tbs garlic powder
1 tsp sea salt
1 tsp pepper
1 Tbs oregano dried
1 tsp salt and pepper
2 cups soy milk
1 ½ cups flour
2 or 3 cups canola oil
¼ cup tomato sauce
1. In small bowl, add garlic powder, salt, pepper and oregano and whisk it all together.
2. Add cheese shreds to glass bowl and make a double boiler on the stove, placing it over a pot of boiling water. Stir cheese until it melts. Add 2 tsp of garlic powder mixture from step 1 and stir together.
3. Line a bread pan with parchment paper and pour melted cheese in. Spread it out evenly and place in refrigerator for 1 hour.
4. Carefully pull flattened cheese from pan and slice them in 10 to 12 sticks, about the width of a finger.
5. Pour breadcrumbs in bowl. Add remainder of garlic powder mixture from step 1 to bowl. Whisk together. Pour soy milk in separate bowl. Pour flour in separate bowl.
6. Pour canola oil into medium saucepan so it’s about 2 or 3 inches deep. Put it on a medium heat and let it warm up.
7. Dunk cheese stick in soy milk, dredge it in the flour, dunk it back in the soy milk and roll it in the breadcrumbs. Repeat for all the cheese sticks. Carefully place them in hot oil to fry. Once golden brown, take them out with a pair of tongs and set on a paper towel.
8. Serve with a cup of tomato sauce.
