This morning I fired up the Woodmizer LX 150 and sawed a Beautiful Clear Red Oak Log, Did hit one nail but no worries. Also Started using the RK 37 Compact Tractor and Granite Grapple to Turn Logs and it works great.

Serves 4

Ingredients
1.5kg Maris Piper potatoes, cut into 2cm chunks 
4 M&S salmon fillets 
1 pack (600g) M&S leeks, chopped
1 pot (300ml) M&S lighter crème fraiche 
1 lemon, zested and juiced
1 tbsp mustard

Method
1. Preheat the oven to 160°C fan/180°C/gas mark 4.
2. Add the potatoes to a baking tray, season with salt and pepper and drizzle with olive oil. Toss together to coat evenly.
3. Roast for 40 minutes until crispy, stirring halfway through. 
4. Place the salmon onto a separate, lined baking tray, season well and then place in the oven for the final 12 minutes of the potatoes’ cooking time. 
5. For the creamy leeks, heat 1 tbsp olive oil or butter in a large non-stick frying pan over a medium heat. 
6. Add the leeks, season with salt and pepper and fry for 8-10 minutes until they soften, stirring occasionally.  
7. Reduce the heat to low and stir in 1-2 tablespoons of the crème fraiche, lemon zest and mustard. Season to taste and add a splash of water if you prefer a slightly looser sauce.  
8. To serve, divide the crispy potatoes between the serving plates, add a spoonful of the creamy leeks, layer the salmon on top and finish with lemon juice.

Orange Chicken

Ingredients

Chicken:
2 tablespoons cornstarch
4 egg whites
4 boneless chicken thighs, cut into bite-sized pieces

Sauce:
1/2 cup orange juice (I used Simply Orange)
1 tablespoon soy sauce
1 packed tablespoon brown sugar
1 tablespoon rice wine vinegar
1/4 teaspoon sesame oil
Dash salt
Dash crushed red pepper
1 clove garlic, pressed
A little grated or minced ginger
1 teaspoon cornstarch
Vegetable or peanut oil, for frying

Directions

For the chicken: In a large bowl, whisk together the cornstarch and egg whites with a fork until almost frothy, about 1 minute. Add the chicken to the mixture and allow to sit for 5 to 10 minutes.

For the sauce: Meanwhile, put the orange juice, soy sauce, sugar, vinegar, sesame oil, salt, crushed red pepper, garlic and ginger in a small nonstick skillet and whisk. Heat until bubbling and starting to thicken, about 5 minutes.

Whisk together the cornstarch and 1/4 cup water in a small bowl and add 1 to 2 tablespoons of the cornstarch slurry to the sauce. Mix in and thicken for 1 minute.

Heat about 2 inches of vegetable oil in a heavy-bottomed Dutch oven until a deep-fry thermometer inserted in the oil registers 350 degrees F. Carefully drop the chicken into the oil and move it around, flipping gently, until golden, 3 to 4 minutes. Let the pieces drain on a plate lined with paper towels for 2 to 3 minutes. Then drop them back into the oil for 1 minute to really solidify the coating.

Toss the chicken in the sauce and serve.

Avocado Toast Three Ways

Ingredients

Avocado Base:
5 ripe Hass avocados
6 scallions, sliced
Juice of 1 lime
1/4 cup chopped fresh cilantro
Kosher salt and freshly ground black pepper

Shaved Egg Salad and Radicchio on Pumpernickel Toast:
3 slices pumpernickel bread
Olive oil, for brushing
3 hard-cooked eggs, coarsely grated on a box grater
1 tablespoon creme fraiche
1 teaspoon Dijon mustard
1 small shallot, thinly sliced
1 tablespoon finely chopped fresh dill, plus springs for garnish
Kosher salt and freshly ground black pepper
1/2 cup torn radicchio

Smoked Salmon and Dill:
3 slices health bread
Olive oil, for brushing
3 ounces paper-thin slices smoked salmon
3 tablespoons creme fraiche
Dill springs, for garnish

Fresno Chiles:
3 slices sourdough or country white bread
Olive oil, for brushing
1 Fresno chile, thinly sliced
Grated zest of 1 lime
Cilantro leaves, for garnish

Directions

For the base: Crush the avocados in a bowl with a fork. Fold in the scallions, lime juice, cilantro and some salt and pepper, leaving the mixture pretty chunky.

For the egg salad and radicchio toast: Brush the pumpernickel bread with oil, and toast under the broiler; or toast in a toaster and then brush with oil.

Combine the grated egg, creme fraiche, mustard, shallot, dill and some salt and pepper in a bowl.
Spread the toast with some of the avocado base, and top with some radicchio, egg salad and dill sprigs.

For the salmon and dill toast: Brush the health bread with oil, and toast under the broiler; or toast in the toaster and then brush with oil.

Spread the toast with some of the avocado base, and then top with some smoked salmon, a dollop of creme fraiche and some dill sprigs.

For the Fresno chile toast: Brush the bread with oil, and toast under the broiler; or toast in the toaster and then brush with oil.

Spread the toast with some of the avocado base. Top with some sliced chiles, a sprinkling of lime zest and some cilantro leaves.

Derek Sarno’s Wicked vegan mushroom tacos | Tesco Food

Tasty Mexican tacos are given a vegan makeover with chef Derek Sarno’s plant-based mushroom version. Still full of smoky flavour, these packed mushroom tacos are perfect for a weekend feast, just follow our easy video recipe to make them at home.

Serves: 4
Time: 5 mins to prepare and 15 mins to cook, plus marinating

Ingredients:
250ml bottle Texas BBQ sauce
150ml vegan IPA
½ red onion, thinly sliced
1 tbsp vegetable oil, plus extra for greasing
2 x 150g packs Portobello mushrooms, stalks removed
1 tsp smoked paprika
1 tsp ground cumin
8 crunchy taco shells
4 iceberg lettuce leaves, shredded
handful sliced jalapeños in brine
handful roughly chopped fresh coriander

Method:
1. Preheat the oven to gas 4, 180°C, fan 160°C. (If you would like to finish off the mushrooms on a barbecue, light it at this point). In a shallow dish, whisk together the BBQ sauce and beer. Set aside. Put the onion in a bowl of cold water; leave to soak.
2. Heat the oil in a heavy-based frying pan over a medium-high heat. Add the mushrooms, stalk-side down, and put a second, smaller heavy-based pan on top (make sure it’s clean) to flatten them. Fry for 2 mins, then flip the mushrooms, press down again with the smaller pan and fry for 2 mins more. Season, sprinkle the spices over both sides of the mushrooms and fry for 2 mins each side with the smaller pan pushed down on top.
3. Add the mushrooms to the BBQ beer mix, turning to coat; leave to marinate for 15-20 mins until cool. Brush a hot griddle pan with oil, then fry the mushrooms until lightly charred. Alternatively, brush the barbecue with a little oil and grill the mushrooms for 2 mins each side.
4. Meanwhile, warm the taco shells in the oven for 2 mins (or on the barbecue). Mash the avocado with the lime juice, chilli and a pinch of salt.
5. Drain the onions. Slice the mushrooms into strips and divide between the tacos. Top with onions, lettuce, jalapeños and coriander. Serve with the avocado and a drizzle of BBQ marinade.

Classic Patty Melt

Ingredients

1 tablespoon olive oil
6 tablespoons unsalted butter
1 large onion, thinly sliced
Kosher salt and freshly ground black pepper
1 1/4 pounds ground beef (80 percent lean)
2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1/2 teaspoon onion powder
8 slices rye bread
About 1/2 pound sliced Swiss cheese

Directions

Heat the olive oil and 1 tablespoon butter in a large nonstick skillet over medium heat. Add the onion and 1/2 teaspoon salt and cook, stirring occasionally, until very soft and golden, about 25 minutes. Transfer to a small bowl.

Mix the ground meat with the ketchup, Worcestershire, onion powder, 1 teaspoon salt and a few grinds of pepper. Form the meat into 4 oblong patties in the approximate size and shape of the bread (they should be a little less than 1/2-inch-thick).

Add 1 tablespoon butter to the skillet and heat it over medium-high heat until the foam subsides. Add the patties and cook, turning once, until cooked to medium doneness, about 2 1/2 minutes per side. Add salt and pepper, if desired. Transfer to a plate.

Wipe the skillet clean. Butter one side of half of the bread slices, then place them butter-side down in the skillet. Add a slice of cheese on top of each slice of bread, then add the patties and onions. Lay one more slice of cheese on top of the onions, then add the top slices of bread. Butter the top of the bread. Flip the sandwiches and cook until the bread is golden brown and the cheese is melted, about 3 minutes per side. Transfer to a cutting board and cover loosely with foil. Cook the remaining sandwiches with the remaining butter in the same manner.

Cut the patty melts in half and serve immediately.

Roasted Eggplant Parmesan

Ingredients

2 1/2 pounds eggplant, unpeeled, halved lengthwise, and sliced 1/4 to 1/3 inch thick
3/4 cup good olive oil
1 tablespoon dried oregano
Kosher salt and freshly ground black pepper
1 (24-ounce) jar marinara sauce, such as Rao’s
1/2 cup julienned fresh basil leaves
1 pound fresh buffalo mozzarella, thinly sliced
8 ounces garlic and herb goat cheese, such as Montrachet
1½ cups freshly grated Italian Parmesan cheese

For the Topping:
1 1/3 cups fresh bread crumbs from a country loaf
4 garlic cloves, minced
1/4 cup chopped fresh basil or parsley leaves
1/4 cup good olive oil

Directions

Preheat the oven to 400 degrees F and arrange three racks evenly spaced.

Lay the eggplant in one layer on three sheet pans and brush both sides with olive oil, using all the oil. Sprinkle with the oregano, crushing it lightly in your hands, then sprinkle with 1 1/2 tablespoons salt and 1 1/2 teaspoons pepper. Bake for 15 minutes. Turn the slices and rotate the pans in the oven and bake for another 10 minutes, until tender. Leave the oven at 400 degrees F.

In a 10 by 14 by 2-inch ceramic baking dish, spread a third of the marinara sauce. Arrange a third of the eggplant on top in one layer. Scatter a third of the basil, a third of the mozzarella, a third of the goat cheese, and a third of the Parmesan on top. Repeat twice, starting with the marinara and ending with the Parmesan, making sure each layer is evenly distributed.

For the topping, place the bread crumbs, garlic, and basil in a food processor and pulse to combine. Add the 1/4 cup olive oil and 1 teaspoon salt and pulse to moisten the crumbs. Sprinkle the mixture evenly over the dish.

Bake for 45 to 50 minutes, until bubbling and golden brown. Allow to sit at room temperature for 10 minutes before serving.

Spaghetti and Meatballs
Servings: 4

INGREDIENTS

Tomato Sauce
1 onion, peeled and halved
1 28 ounce can crushed tomatoes
½ cup unsalted butter
1 teaspoon salt

Meatballs
1 pound ground pork
1 pound ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 cup shredded Parmesan
1 cup panko
¾ cup parsley, finely chopped
2 tablespoons Worcestershire
1 egg
2 teaspoons salt
1 teaspoon black pepper

1 pound spaghetti
Parmesan, to serve

PREPARATION
1. Preheat the oven to 400˚F (200˚C).
2. Add the crushed tomatoes, butter, onion, and salt to a pot and bring to a simmer over medium heat. Lower the heat and cook for 3. 45 minutes, until the onions are soft and starting to break apart..
4. In a bowl, mix the ground beef, ground pork, panko, Parmesan, egg, garlic, onion, Worcestershire, salt, pepper, and parsley until fully combined.
5. Take a golf ball-sized handful of the meat mixture and roll it into a ball. Transfer to a baking sheet. Repeat with the remaining meat.
6. Bake the meatballs for 16 minutes.
7. Bring a pot of water to a boil, and cook the spaghetti according to the packaging instructions.
8. Transfer the cooked meatballs to the sauce, and spoon over the pasta. Top with Parmesan, and enjoy!
